KP Duty – Cinnamon Sugar Tortilla Chips

Confessions from HouseholdSix KP DutyI’m going to start a new series called “KP Duty.” My husband insists this shows my age, and just how long we’ve been around the Army, but I’m OK with that. The purpose of this series is to show that cooking without a box doesn’t have to be complicated. Most meals I make are meals I can make in about 30 minutes. I’ll admit we don’t always eat the most healthful meals, but we think they sure do taste good. My disclaimer up front is that I really don’t measure when I cook. Everything here is an approximation. If you find you like more or less, that’s OK. Tweak these recipes to suit your needs.

I’m going to start with a really easy snack recipe first. I got the idea while making some cheeseburger flatbreads for dinner (recipe will come later). Why not take the fried tortillas and sprinkle them with cinnamon and sugar? So I did. And they were yummy.

cinnamon sugar tortillas

Ingredients:
vegetable oil
flour tortillas (any size you have on hand will do)
cinnamon sugar (you can make your own mix, but I’m lazy and bought the pre-made kind)

Directions:
1. Heat about a cup of oil on medium-high heat until hot in a large frying pan. I don’t have a thermometer, but I’d guess 350 degrees or so.
2. Put a tortilla in the pan, flipping when the edges are slightly browned. It only takes about a minute or so on each side.
3. Drain the tortilla on paper towels and sprinkle with cinnamon sugar.
4. Cut to desired size.

About Amanda

Amanda Griffiths sometimes feels as though she's running a zoo instead of a home. With two active autistic boys, they often make the noise of six kids. Pepper in some Army life and cyber schooling for spice, and it's organized chaos at best. When visiting, please don't feed the animals. They have food allergies.
